How can I be as good at hand to hand combat as Ezio from assassins creed?

Ezio basically deflects and defends and hits when an opening appears. Most martial arts classes teach these. Look up hand to hand martial arts (as many focus on kicking) and try Kendo (a martial arts of sword fighting).
